Your findings cannot be any further from my own. I'm running straight off my PC and could not hear any benefit from using the iPower 5V PS in my system. How much time have you spent with the Zen Dac, was it fully 'run in' and which interconnects did you use?
Yes Bernard, it could work the way you plan to use it. Depending on your phone's features, you may be able to add a Micro-SD card to your phone, which would make for a less unwieldy setup. Its great that that particular board has both BT 5.0 as well as AUX IN via a 3.5mm input.

I do not know how to describe it in Audiophile speak, but the Sky?s are simply perfect. Its like there is no cable. Its as if all the frequencies comes through perfectly and with perfect timing. The bass is also exceptional, not that its accentuated, its just that more bass...

That is basically the exact one that I have. Believe me when I tell you that even a 5V power-bank will power it well enough for normal listening levels on all of your speakers. I?ve even used it for the Maggies I recently had.
