My favourite kitchen gadget... what is yours?

What is your favourite kitchen gadget? I like cooking and have had a few. The one thing I recently discovered is a convection oven. Dang, this thing is totally amazing! I am sorry I did not discover it sooner, it cooks beautifully! Food is very tasty. It is easy to use and very easy to clean.
