Old processor with new sources

I am considering getting an old high quality AV processor ( eg Krell Standard / Anthem AVM 30 ) to replace my new Yamaha Receiver amp. I will be getting separate power amplifiers and all I would further need is a processor-amp  that can extract the digital audio. Now issues:

1. Old stuff does not have HDMI interfaces - this is not really a problem for the video stuff as my TV has multiple  HDMI inputs. However what about the sound signals ? Will most Dolby 5.1, DTS etc be catered in the older TOSlnk and digital coaxial interfaces?

2. Will there be an issue with sound / video synchronization as  the decoding speed of the TV and the old generation processor amp could be different?

Perhaps I should just get a good DAC and then an analog preamp for the Phono, DSTV.
