what gets lost on mp3 conversions?

we all know mp3 is lossy, right.

but what actually gets lost in the process?

the linked site has an audio / video file, supposedly showing what is actually stripped out when suzanne vega's "tom's diner" is compressed (audio to mp3, video to mp4).

there does seem to be a fair amount removed, but in some places there is nothing...
